South Asian Part Deux

I love technology. With UStream I was able to attend a memorial service for friend. It felt funny to just sit and look at the screen, so I decided to finish up my first foray in South Asian Style cook while listening to the service. Cooking calms me.

It felt good to do something I love so much while listening to the voices of women I have not seen in a decade, talk about one of the fiercest woman I’ve ever met. She lived life, and by her actions, helped a whole bunch of people do better, be better, and in my case, be less afraid of cancer and chemo. So, in honor of a woman named V I made Tandori baked chicken breasts… a saute of broccoli rabe and asparagus… a salad of mixed greens, fresh spinach, mint from the garden, English cucumber, and freshly roasted Oregon hazelnuts with my special ginger sesame dressing.

I used my super spice mix, the one in the kit, a couple of cloves of garlic, some lemon juice and a good Extra Virgin Olive Oil to make up a paste to slather two pretty good sized breasts with. I baked it for about 25 minutes at 400 degrees (until a meat thermometer read 160).

EVERYTHING turned out tasty…. I like my new spice kit and can hardly wait until I try the rest of what is in that box! Lamb is next….
